Although it's more of a coffee table book than a cookbook (though it's full of recipes), I absolutely adore "My Last Supper"
http://www.amazon.com/My-Last-Supper.../dp/1596912871
The photography is absolutely gorgeous and the interviews are wonderful. I have gifted this book SEVERAL times. It's lovely.

I'll second Ruhlman's Ratio. I recently bought this for my fiance and I ended up finishing it before I gave it to her. Before this book, I had no interest in cooking. She cooks 90% of our meals and the other 10% are takeout or delivery, etc.. But lately I've been on a cooking mission. The book got me fascinated with cooking. This book is NOT a recipe book per se. But it has quite a few recipes in it. I highly, highly recommend this book.

I'm actually on my second copy, because the first one (from the 80s) fell apart and was just a mess.

I love the local/church cookbooks. My grandma buys me cookbooks from rummage sells and such from the small town she is in. I have found that the church made cookbooks really hold recipes that my kids will eat! The mainstream cookbooks are fine, but I'm more inspired by the small town recipes

In addition to the above, I like How to Cook Everything, and good old Betty Crocker.

You might like "The New Basics Cookbook" by Julee Rosso. I think it's meant to be like "The Joy of Cooking", but with recipes that are more updated and inventive.

I love "Gourmet Today: More than 1000 All-New Recipes for the Contemporary Kitchen" by Ruth Reichl.
Also, because I'm a bit of a health nut, I adore anything by Jonny Bowden, particularly "The Healthiest Meals on Earth: The Surprising, Unbiased Truth About What Meals to Eat and Why."
I don't cook very often, but I love flipping through actual cookbooks. My sister is in culinary school, so I'm in heaven any time I visit her in NYC. Phenomenal cookbooks (and food) galore!
When eating an elephant, take one bite at a time.

"How to Cook Everything" is my favorite cookbook. Mark Bittman pretty much taught me how to cook.
I've been enjoying Gwenyth Paltrow's cookbook. I didn't expect much but I love every recipe I've tried. Very simple with wonderful flavors and good ingredients.

I love Deborah Madison's "Vegetarian Cooking for Everyone" and Donna Hay's "Modern Classics," Books 1 & 2. Madison's is huge and appeals both to vegetarians and meat-eaters; Hay has fewer recipes, but every single one I've made has been delicious. Best Caesar salad dressing, amazing orange poppyseed cake, etc.
