Favorite recipes for freezing
I love cooking up a huge batch of something and then freezing it, leaving me with lots of "easy" meals that I can just heat up later.
We have a few go to recipes (goulash, chicken tortilla soup, meatballs) that we make like this, but I'd love to know if anyone else has some favorite recipes for freezing.

Mac and cheese, chili, spaghetti sauce all can be cooked ahead and separated into serving sze packets.

How well does mac and cheese freeze? I am a bit nervous about it. I use a recipe based on Alton Brown's, and I am afraid of the cheese not taking the freezing/defrosting well.
Chili is a great idea!
Now, I just have to find a recipe I love.

Stuffed Shells and Lasagna. Giada has a great recipe for Turkey and Artichoke Stuffed Shells with Arrabiatta Sauce. It's divine. I've done it with and without the artichokes, it's fantastic.

Mac and cheese freezes very well. Also, I freeze stuffed peppers, lasagna and basically any kind of casserole.

Cooked rice freezes really well; I've frozen beans and rice, fried rice, Spanish rice, etc. Any broth- or tomato-based soup usually does well; creamier soups sometimes have funky separation issues, although I've had good results with white chicken chili.
This might be obvious, but when you freeze soup or any other liquidy substance, you can use zip-top freezer bags and lay them on their sides, so they're flat. Then they freeze into nice, stackable "bricks," and since more of the surface area is exposed, they thaw more quickly, too.

I freeze anything, except the things that are known not to freeze well: custards, etc. I have frozen beans, chili, cooked cabbage, soup, chopped onions, rice, all baked goods, pasta sauce, cooked ham, etc.

I like making individual pizzas for dinner, so I freeze pizza sauce into cubes and make and freeze batches of this dough: http://www.marthastewart.com/316808/...at-pizza-dough
We also cure and smoke bacon and keep several pounds in the freezer, cut into both strips and lardons.
