    Pollo Asado

    I thought I'd share my pollo asado recipe with you folks. If you don't have chili pods available two tablespoons of chili powder will work as well.

    1/4 cup olive oil (EVOO preferred)

    1/4 cup lime juice

    3/4 cup orange juice

    2 tsp rice vinegar (unseasoned)

    2 tsp kosher salt

    2 tsp fine ground black pepper

    3 tsp Mexican oregano

    1/4 tsp fresh ground cumin

    2 tsp granulated onion

    1 clove garlic

    2 California chili pods

    4-6 pieces of boneless skinless chicken thighs or breasts

    Cut the stems off of the chili pods and remove the seeds. Blanch the pods in hot water for 20 minutes. Combine all of the ingredients except the chicken in a blender and blend on high until the marinade is a smooth incorporated consistency. Place the chicken and the marinade in a ziplock bag and marinate for at least four hours, preferably over night. Grill over a medium flame.

    Sounds delicious..thanks for sharing. I have a Ninja Crockpot and this will be a great recipe to try in that.
