    Garlic Parmesan Oven Fries

    Garlic Parmesan Oven Fries
    recipe adapted from Tyler Florence
    serves 3-4

    2 large russet potatoes, scrubbed and dried
    1/4 cup extra virgin olive oil
    3/4 teaspoon kosher salt (I use regular salt)
    1 garlic clove, minced (I use the chopped garlic in a jar, we love garlic so we use a little more)
    1/4 cup freshly grated Parmigiano-Reggiano cheese (I go the cheap route and use the Kraft version)
    2 tablespoons chopped fresh flat leaf parsley (if I dont have any fresh, I use the dried one)


    Preheat the oven to 425.

    Cut the potatoes in half lengthwise. Then cut the halves lengthwise into fourths to make 16 big, fat wedges.

    Toss the potatoes with the olive oil, salt and minced garlic in a large bowl. Place the potatoes onto a metal baking sheet, spreading to a single layer.

    Roast the potatoes for 30-35 minutes, until the potatoes are cooked through, brown, and crispy. Don't shake or turn the fries around while they're cooking. The longer they sit in contact with the metal baking sheet, the crisper they get.

    Mix the cheese and parsley together. Add the cheese mixture onto the potatoes after they are done baking.

    If you make more then this, you may have to bake for longer.

    I make nearly the exact same thing all the time. I must say that it is truly delicious. I often top steak or chicken salads with them when I am out of fries. I can recommend this 100%. Yum!

    I make something similar, except I don't cook the garlic with the potatoes, I add a small amount of freshly minced garlic to some olive oil and coat the freshly baked potato wedges with it and then top it with the cheese and parsley mixture. It is very garlicy and so yummy! Smells delicious too!

    It's 8:20 in the morning as I read this recipe. I want to try it NOW!! I love potatoes in any form. Garlic is always present in my kitchen. Sounds so incredible that I know I'm gonna make some for lunch.

    I make something similar except I skip the cheese, so basically I just make garlic fries, soooo yummy.

    I've made these twice already and they are really good. The only thing I did differently was bake them in a convection oven. I have to say that 2 potatoes do not necessarily make 3-4 servings. Cough cough.
